Chia Seed Pudding Ingredients:
- 1 can of coconut milk (can be found in the Thai section at the grocery store. I like the one from Trader Joe’s)
- 2 cups of coconut milk (this comes in a carton found in the refrigerated section near other nut milks)
- 1 cup of chia seeds
- 1/2 t. cinnamon
- 1/2 t. vanilla extract
- 1/4 cup of raw honey
Whisk all ingredients together in a bowl until well combined. Cover and place in the fridge for about 2-3 hours.
Smoothie Ingredients:
- 2 frozen bananas
- 1 cup of frozen strawberries
- 1 pack of frozen açaí
- 1 avocado
- 2 dates, pitted
- A splash of coconut milk
Blend all ingredients together in a high speed blender adding a splash of milk as needed. You may need to stop to mix it half way through to ensure it’s fully blended.
Spoon the chia seed pudding into cups filling them half way. Then, pour the smoothie over the pudding and top it with things like grain free granola, nut butter, coconut flakes, cacao nibs, and fresh organic berries!
