Bbq Chicken Stuffed Sweet Potatoes

This cool Fall weather is making me want all things squash and sweet potato! Seasonal changes often bring about different food desires depending on what fruits and vegetables are in season, which explains my eating changes lately! We tend to desire fresh salads or foods like tomatoes, cucumbers, berries, etc. in the summer and foods like squash, sweet potatoes, pumpkin, apples, or starchy foods, etc. in the fall. Not sure if you’ve recently noticed a change but I sure have! I’ve been buying ingredients to make salads but it just doesn’t seem appealing most days! That’s ok, your body knows what it needs and it’s important to listen! This SUPER SIMPLE meal was exactly what I needed!

Ingredients:

4 sweet potatoes, baked

3 organic chicken breasts

1 bag of frozen broccoli

1 1/2 tablespoons of curry powder

1/2 tablespoon of turmeric powder

2 Tablespoons of avocado oil

Salt & pepper

Instructions:

Combine all ingredients (except the sweet potatoes) together in an instant pot. Set it to the poultry setting. Once finished allow it to self vent. Open the lid and use two forks to shred the chicken. Slice the sweet potatoes vertically and spoon the shredded chicken into the opening! Top with microgreens and enjoy!
