This apple cinnamon cobbler was inspired by my 2 ingredient “peach” cobbler that I made at my moms house one night! You can search my website to find it! But for this recipe instead of nectarines I used apples! It turned out great and can be eaten for breakfast or dessert!
Ingredients:
4 apples, cored and diced
2 tablespoons of coconut oil
2 tablespoons of coconut sugar
1 tablespoon of cinnamon
2 cups of water or nut milk
Instructions:
Heat the oven to 350 degrees. In a cast iron skillet heat the coconut oil on the stove over medium heat. Add the apples, coconut sugar and cinnamon and stir occasionally until apples soften. Meanwhile, in a bowl mix together pancake mix and water. Pour the mixture over the apples and bake for about 45 minutes (or until a toothpick comes out clean). If you don’t have a cast iron skillet, just transfer everything to a oven safe pan! Enjoy!
