Stuffed Delicata Squash Boats

I love to turn the oven on when I get home from the grocery store and bake my squash, sweet potatoes, things like that, right away so I don’t have to wait for them when I want to get dinner on the table during the week. Because I had baked the delicata squash ahead of time, this meal took no time at all and it was so good!

Ingredients:

  • 3 Delicata squash, baked and de-seeded
  • 1 1/2 pounds of 100% grass fed beef
  • 1 packet of taco seasoning (I like Primal Palate or Trader Joe’s brands)
  • Handful of chopped spinach
  • 1/2 cup shredded vegan cheese
  • 1 avocado, diced
  • Taco sauce or hot sauce
  • You can add whatever toppings you’d typically add to your tacos!
  • Instructions:

    To bake your delicata squash, preheat the oven to 400 degrees. Wash the outer skin of the squash (they are edible) and bake them for about 40 minutes or until soft. Allow to cool slightly. Chop the ends off and slice them lengthwise. Use a spoon to de-seed them. Set aside. Meanwhile cook your beef and taco seasoning in a cast iron skillet on medium heat. Once it’s cooked through spoon it into the opening in the squash. Sprinkle on spinach, cheese, avocado and taco sauce and enjoy!!
