Taco Bowls

What better day to have tacos than on Tuesday! I typically make a taco inspired salad for myself and my husband on the nights I make the kids tacos but tonight I switched it up a bit. Have you ever made your own taco bowls? They are really easy to make and are a great way to change up a traditional salad!

How to make taco shell bowls:

Preheat your oven to 350 degrees. Take your soft tortillas (I use Siete grainfree wraps) and brush them or spray them with a little oil. Place glass jars upside down on a cookie sheet. Drape wraps over the top of jars and allow them to bake for 5-8 minutes.

Remove from oven and allow them to cool. While my wraps were baking I was getting my meat ready. I placed a few chicken breasts in my Instant Pot. I added chili powder, cumin powder, garlic power, chipotle powder, salt & a little water and allowed it to cook. Once it’s done cooking you can shred it with your hands. You’ll want to allow it to cool slightly before trying to shred it though! Once your bowls are cooled they are ready to fill!

I added the shredded chicken to my bowls, along with some purple cabbage, tomatoes, avocado, shredded romaine, green onion, salsa and hot sauce (because I like them spicy) and that’s it! Easy delicious and fun! Enjoy!
