Asian Stir Fry

So now that you have the peanut ginger dressing that I made for that delicious salad yesterday (you can find it here), I thought I’d share another recipe you could use it in! This one is just as delicious in my book!


Recipe:

  • 2 organic chicken breasts, diced
  • 1/4 of a head of purple cabbage, chopped
  • 1 Bok choy, chopped
  • 2 heads of broccoli, chopped
  • 1 bag of cauliflower rice (I used the frozen bags from Costco)
  • Avocado oil
  • Salt

Instructions:

  1. Add a little avocado oil to a pan and add the cauliflower rice and salt.
  2. Sauté the “rice” until slightly golden and then remove from heat.
  3. While the rice is sautéing you can start cooking the chicken & veggies. Heat a little avocado oil in a separate pan over medium heat. Add diced chicken, bok choy, cabbage, and broccoli and sauté until slightly browned.
  4. Once the chicken is just about cooked through add the peanut ginger dressing (from previous salad post). Simmer and allow flavors to marinade.
  5. Remove from heat. Spoon the cauliflower rice onto a plate and top it with the chicken and veggies!
  6. Add some chopped freshly chopped green onion and enjoy!
