Costco has frozen cauliflower rice which I’m pretty excited about!!! It even comes in individually wrapped bags! I also picked up a bag of pre- shredded salad! I threw a bag of the cauliflower rice in a bowl and mixed in two eggs, salt, pepper and garlic. I Heated a pan with avocado oil and sautéed the “rice” until golden! Next I added some of the bagged salad to a bowl (I toss the inner bag filled with dressing and cheese) and topped it with the rice. Added an avocado and drizzled on some dressing for a quick and easy lunch!
