Key Lime Pie Dairy Free Ice Cream

I was at Meijer the other day and saw a $20 ice cream maker (by Nostalgia) that doesn’t require salt, so I picked one up! We decided to make a key lime ice cream but while it was churning in the machine I thought key lime PIE!!! So I quickly lined a pan with parchment paper. Mixed together some almond flour, coconut oil and honey and spread it out on the pan. I put it in the oven at 300 degrees for about 10 mins or so. Once the ice cream was ready to eat we topped it with the “pie crust” crumbles! It was SO good!

Ice Cream Recipe:

  • 2 ripe avocados, peeled and pitted
  • 2 limes, juiced
  • 1 can of full fat coconut cream
  • 1/2 cup coconut oil
  • 1/3 cup raw honey
  • 1/4 teaspoon of salt
  • 1 teaspoon of vanilla extract

Instructions:

  1. Blend all ingredients in a blender.
  2. Place in the ice cream maker.
  3. Once it’s ready transfer it into a lined loaf pan and place in the freezer!
  4. Enjoy!

*I placed half of the blended ice cream mixture directly in the freezer (skipping the ice cream machine step) to find out if it would taste as good but my boys got to it before I could and ate the entire thing. So, sadly I’m not sure how it turned out but either way it’s safe to say they loved it!
