Herb Roasted Chicken

It’s that time of year!!!

Fall is my favorite season and this hearty meal is one of my families fall time favorites! The sweetness from the apples and sweet potatoes pair so well with the savory herbs! The aroma of apples and herbs roasting in the oven is sure to permeate your home creating a warm and inviting atmosphere! There is just something so special about uniting around the dinner table together on a chilly evening enjoying a meal that everyone loves!

 

Ingredients:

  • 1 whole organic chicken
  • 5-6 large carrots, chopped
  • 2-3 sweet potatoes, washed and diced
  • 2 apples, cored and diced
  • 1 package of fresh poultry herbs, stems removed and minced
  • 1/2 carton of chicken bone broth
  • drizzle of olive oil
  • salt & pepper

Directions:

Place your whole chicken in a pan. Place veggies and herbs around it. Pour Chicken broth and drizzle olive oil over top. Sprinkle with salt and pepper. Cover and bake @ 325 degrees for 1 1/2 hours. Uncover, turn heat up to 375 and bake for an additional 1/2 hour or until the top of bird is slightly browned!
