Grainless Pumpkin Loaf

It took me a while to get this recipe up on my website, but I knew you’d love it so here it is! This pumpkin bread has the perfect amount of sweetness and spice (and everything nice)! If you’re looking for something to bring to a holiday party, this is it! It’s free from grains, refined sugar, dairy and soy and its delicious!

Ingredients:

  • 3 eggs
  • 2/3 c. almond butter
  • 1/3 c. honey
  • 1 t. vanilla extract
  • 1 c. nut milk
  • 1/2 c. almond flour
  • 3/4 c. coconut flour
  • 1/4 c. tapioca flour
  • 2 t. cinnamon
  • 1/2 t. nutmeg
  • 1/2 t. clove
  • 1 t. baking soda
  • 1/4 t. salt
  • 1/2 c. raisins
  • 1 c. pumpkin puree
  • Optional: chopped nuts, seeds, & dried fruit to sprinkle on top of loaf

 

Directions:

Preheat oven to 350 degrees. Combine wet ingredients with dry ingredients. Line loaf pan with parchment paper. Pour batter into pan and top with crushed nuts, seeds, and dried fruit. Bake for 50-55 mins. Let it cool completely before slicing! Enjoy!
