I thought adding spinach to my pancake batter would make them a fun green color for the kids for St. Patrick’s Day, BUT… because the batter was already brown (from the yummy chocolate protein I added) they turned a really ugly color! HA! Oh well, the kids didn’t mind and scarfed them down in seconds!
St. Patricks Day Pancakes
Ingredients:
- 6 Eggs
- 1/4 c. Milled Flax Seeds
- 1/4 c. Ground Chia Seeds
- 1 T. Coconut Oil, Plus a little extra to heat in pan
- 1 Scoop of Chocolate Protein
- Handful of Spinach
Directions:
Blend all of the ingredients together. Heat a dab of coconut oil in a pan. Pour batter by 1/3 cupfuls and cook until bottom is golden brown. Flip and cook a minute or two longer.
For a special treat top them with 100% maple syrup or raw honey.
