So now that you have the peanut ginger dressing that I made for that delicious salad yesterday (you can find it here), I thought I’d share another recipe you could use it in! This one is just as delicious in my book!
Recipe:
- 2 organic chicken breasts, diced
- 1/4 of a head of purple cabbage, chopped
- 1 Bok choy, chopped
- 2 heads of broccoli, chopped
- 1 bag of cauliflower rice (I used the frozen bags from Costco)
- Avocado oil
- Salt
Instructions:
- Add a little avocado oil to a pan and add the cauliflower rice and salt.
- Sauté the “rice” until slightly golden and then remove from heat.
- While the rice is sautéing you can start cooking the chicken & veggies. Heat a little avocado oil in a separate pan over medium heat. Add diced chicken, bok choy, cabbage, and broccoli and sauté until slightly browned.
- Once the chicken is just about cooked through add the peanut ginger dressing (from previous salad post). Simmer and allow flavors to marinade.
- Remove from heat. Spoon the cauliflower rice onto a plate and top it with the chicken and veggies!
- Add some chopped freshly chopped green onion and enjoy!
