These clean, easy, protein packed treats are an awesome alternative to those sugar filled bars I grew up on! My mom used to make us the peanut butter version so that is what I’m used to. Of course, they don’t compare to the gooey-ness of the real deal but I will say they definitely brought me back! And honestly I don’t compare the food I eat now to the food I used to eat. It’s obviously not going to taste the exact same considering we are using different/BETTER ingredients. As long as we think it tastes delicious that’s all that matters to us around here! And the best part? I have NO problem giving these to my kids for a treat, snack, or even for breakfast!
Recipe:
- 4 cups of Crispy Brown Rice Cereal (I used Erewhon brand)
- 1.5 scoops of vanilla protein powder, *optional (I use Grass-fed Beef Paleo Protein by Julian Bakery)
- 3/4 cup of organic peanut butter, melted
- 1/4-1/2 cup of raw honey
- 1/4 cup coconut oil, melted
- A dash or two of salt
- Combine all ingredients together in a bowl. Make sure to melt the ingredients that require melting before adding them.
- Mix everything together until cereal is completely coated.
- Line a pan with parchment paper and dump contents of bowl inside pressing firmly to make sure it’s spread out and packed down.
- Put it in the fridge and allow it to harden for at least an hour or so.
- Once chilled, remove it from the pan and cut it into squares! (I actually enjoyed them in the freezer too!)
